Restaurant Manager in Hitchin | -36,500 + Tronc & Bonus (up to -10k)

I am recruiting for an iconic high quality, venue in Hitchin. This role offers full ownership of the day-to-day operation and a clear path into senior management through their progression program.

The Package:

• -36,500 basic + Up to 10,000 in Tronc & Bonus
• WSET Level 1 & 2 training provided
• Local and international supplier trips
• wine at cost, meals on shift, and additional days off annually
• Generous staff rates across all sites

The Role:

• Lead, develop and mentor the front-of-house teams
• Oversee daily operations, rotas, and training
• Manage budgets, costs, and KPIs to maximize profitability
• Maintain high service standards in a busy environment
• Coordinate with the kitchen and senior management to drive growth

Requirements:

• Current Restaurant Manager or strong Assistant Manager ready for a step up
• Experience in busy, high-quality independent restaurant and bar environments
• Solid commercial awareness
• Strong knowledge of wine
