hands-on, experienced Head Prep Chef / Kitchen Manager

to lead their

central prep and bakery kitchen

in the heart of

Borough Market .

This group has had a phenomenal first year, earning major industry recognition including a

Michelin star

and a

Bib Gourmand , with a concept inspired by the vibrant markets and flavours of the Mediterranean and Levant

powered by seasonal British produce and a serious commitment to quality.

The Role

Youll be leading a core team of chefs and overseeing essential prep operations for two busy restaurants that serve over

6,000 guests per week . This is a role for someone calm, focused and highly organised

someone who knows how to run a tight ship while maintaining the highest standards of food quality, hygiene, and team morale.

Shift Pattern

Early mornings

(start around

4am )

finish by early afternoonFull-time, permanent roleASAP start available

Responsibilities

Lead and support a prep kitchen team of around

4 chefs per shiftEnsure all prep is completed to par levels, to spec, and on timeOversee

night bakery

and

night butchery

operationsManage deliveries and stock rotationInput invoices and assist with stock control systemsCarry out food safety checks and ensure due diligence is followedSupervise and rota the KP and prep kitchen teamsMaintain a calm, productive, and quality-focused kitchen environment

What Were Looking For

Experience as a

Sous Chef or above

in a high-quality, high-volume environmentStrong leadership and kitchen management skillsConfidence working with premium, fresh produceMeticulous attention to detail and food hygiene standardsComfortable starting early and leading a key part of back-of-house operationsA natural team player who takes pride in getting things done to a high standard
