If you think high end casual dining you wont be far off what they are looking to achieve. To get there they are enlisting the services of an ex Great British Menu Executive Chef who will oversee the operation in terms of initial menu development and presentation with a view to the incoming Head Chef taking more of a front seat in due course. This will be an ingredient led menu showcasing British produce and that of the Channel Islands while maintaining the highest standards and culture. There is a brigade of up to 10 in the busier months reducing to around 6 in winter many of whom have been on board for more than a short time.
