Fish and Meat Specialist
About the Role We are looking for an experienced Fish and Meat Specialist to join our retail team. This is an excellent opportunity for someone with a passion for fresh food and customer service. Experience preparing Japanese cuisine products, including sushi-grade fish, sashimi, nigiri, sukiyaki, and yakiniku cuts, is highly desirable. Key Responsibilities for Fish and Meat Specialist Prepare, trim, debone, fillet, portion and package fresh fish, seafood, poultry and meat products to company standards. Prepare sushi-grade fish and seafood safely and accurately for sushi, sashimi, nigiri and other Japanese dishes. Maintain attractive product displays, ensuring products remain fresh, well-stocked and correctly labelled throughout the trading day. Follow all food safety, HACCP, hygiene, traceability and temperature control procedures at all times. Receive deliveries, rotate stock using FIFO principles, monitor stock levels and minimise waste through effective stock management. Provide excellent customer service by offering product knowledge, preparation advice and cooking recommendations while handling special customer requests professionally. Safely operate knives, slicers, grinders, saws, scales and other equipment, ensuring all machinery is cleaned, maintained and used safely. Complete daily paperwork, legal compliance checks and other administrative duties while maintaining a clean, organised and safe working environment.
