This is an excellent opportunity for someone with a passion for fresh food and customer service. Experience preparing Japanese cuisine products, including sushi-grade fish, sashimi, nigiri, sukiyaki, and yakiniku cuts, is highly desirable. Key Responsibilities for-Fish & Meat Specialist Prepare, trim, debone, fillet, portion and package fresh fish, seafood, poultry and meat products to company standards. Prepare sushi-grade fish and seafood safely and accurately for sushi, sashimi, nigiri and other Japanese dishes. Maintain attractive product displays, ensuring products remain fresh, well-stocked and correctly labelled throughout the trading day. Follow all food safety, HACCP, hygiene, traceability and temperature control procedures at all times. Receive deliveries, rotate stock using FIFO principles, monitor stock levels and minimise waste through effective stock management.
